Zucchini and salmon casserole topped with grated cheese

Ingredients:  

2 medium size                                                          zucchini (weigh to assess carbohydrate)

60 grams                                                                    salmon

30 grams                                                                    grated low fat cheddar

40 grams                                                                    onion

1 tbsp                                                                         parsley

30 grams                                                                    tomato

 

Method:

Cut zucchini in half lengthwise and scoop out flesh. Put zucchini boats into Pyrex dish.  Cut zucchini flesh and mix with cubed tomato and flaked salmon and cubed onion. Stir through parsley and pile into zucchini cases. Grate cheddar cheese over top. Pour 1/3 cup of water into dish, cover with foil and bake at 180 degree C or 350 degree F for 20 minutes.

Uncover and bake an additionally 5 minutes then serve.
