CHICKEN PARMAGIANA

60 g chicken breast sliced thinly in half

45 g zucchini, sliced                    60 g tomatoes, crush

Oregano, flesh, to taste             pepper, lite salt

2 tsp olive oil                               1 clove garlic, crush

 

1: heat oil in a fry pan, add chicken and garlic and sauté a few minutes until lightly browned and nearly cooked through. Sprinkle with salt and pepper to taste. Remove from fry  pan and set aside.

2: add zucchini to pan. Sprinkle with salt and pepper to cook for 5 to 10 minutes or until zucchini is crisp on the side outside and tender in the centre. Remove from pan.

3: arrange chicken in the middle of the pan and top with zucchini, tomatoes, herbs, and then the cheese.

4: cover and cook for 3to 5 minutes or until cheese melts and sauce is hot.
