Curried vegetables

Serve 1

Carbohydrates:                             9 grams

 

Ingredients:

35 grams                                        green bean, cut into piece

50 grams                                        cauliflower, cut into pieces

40 grams                                        eggplant, cut into pieces

40 grams                                        cucumber, cut into pieces

1 clove                                            diced garlic

1tsp                                                 curry powder

1tbsp                                               safflower oil

½                                                       water

 

Method:

Heat oil in saucepan and fry garlic until transparent. Add curry powder and stir through. Add vegetables and ½ cup water. Cook briefly – approximately 5-10 minutes and serve.

Don’t overcook!
