Dumplings:-
120 g chicken minces 1tsp fresh coriander 1 clove garlic crushed
Chicken broth:-
2 cup water 2 cup water with T-360 chicken packet
10 g fresh lemon grass stick, chopped finely
1 red thai chili, sliced 1 tbsp salt free soy sauce
A squirt of lemon juice 60 g bok Choy, chopped coarsely
20 g spring onion, sliced fresh coriander to taste
1: combine the water, packet. Lemon grass, chili and soy sauce in large saucepan. Bring to a boil. Reduce heat, simmer, uncovered for about 5 minutes.
2: meanwhile, make chicken dumplings – using hand, combine mince, coriander and garlic. Using hand roll level tablespoons of the mixture into balls.
3: add chicken dumplings to simmer broth. Simmer, covered, for about 5 minutes or until dumplings are cooked through.
4: add lime juice, bok Choy just wilt. Stir in coriander just before serving. Cook for about 5 minutes, until meat is cook.
