SALMON STEAK WITH TOMATO AND ONION SALSA

120g red or pink salmon steak

60 g tomato, diced

20 g red onion, diced

1 clove garlic, crushed

20 g green olive

A squirt of lemon juice

1 tsp cold pressed oil

 

1: combine tomatoes, onion, olives, and garlic in a small bowl with cold pressed oil and lemon juice, cover and refrigerate.

2: heat pan on medium high, spray salmon with oil and season with pepper.

3: cook salmon for 3-4 minutes each side.

4: place salmon on plate. Top with salsa and serve.
