2 medium (105 g) mushrooms-stalk trim

30 g ham, shredded

20 g red onion, finely sliced

35 g low fat grated cheese

15 g spinach


1: preheat pan on a high with a 1tsp of oil and onion and cook until onion is soft. Set aside.

2: brush both side of the mushroom with oil, cook stalk side down to three minutes.

3: cook spinach until wilt, mix with ham and onion.

4: place mushroom with stalk upright and spoon ham, onion, and spinach into mushrooms.

5: top with grated cheese, cook for 2-3 minutes until filling is warm through.
