GREEK STYLE MEATBALLS WITH YOGURT DRESING AND SALAD

Carbohydrates:                1 g in meatballs, 3 g in dressing, 0 g in salad.

Protein:                             2 ½ serves in meatballs, 0 g in dressing, 0 g in salad

 

Meatballs: -                                                     dressing:-

120 g lamb minced                                       30 g plain yogurt

1 egg                                                               20 g Lebanese cucumber

1 clove garlic, crushed                                 ½ clove garlic, crushed

¼ tsp oregano

 

Salad:-

50 g cherry tomatoes

40 g grated cucumber

1 tbsp fresh mint leave, finely chopped

A squirt of lemon juice

2 tsp of approved oil

 

1: Mix together all ‘meatball’ ingredients, roll into little balls, and fry in a pan on medium to high heat. Set aside.

2: Mix all dressing ingredients together. Set aside.

3: With remaining ingredients (salad) – halve cherry tomatoes and grate cucumber. Mix lemon juice and oil together, add mint leave, and pour over tomatoes and cucumber salad.

4: Serve meatballs with dressing and salad. Dressing can either pour over meatballs or used as a dipping sauce.
