120 g chicken breast                          20 g onion, sliced

1 tsp curry powder                            60 g tomatoes, crushed

35 g baby spinach leaves                  50 g low fat cream


1: Heat olive oil in a fry pan. Add the chicken and browned. Set aside.

2: Add the onion to the pan and cook until soft.

3: Add the curry powder and cook for a few minutes.

4: Remove the chicken to the pan; add the tomatoes, baby spinach and the cream.

5: Simmer remove a gentle heat for about 10 minutes, uncovered until the chicken is cooked through and the sauce thickens
